You’ve seen this everywhere with pasta. Make it bariatric eating style! You could pour this over a SHOE and it would be delicious. I could easily eat a small bowl of this by itself.
For this evenings supper I am going to toss my Baked Feta with Tomatoes over pan seared shrimp, but over roasted sliced chicken breasts or salmon, YUM!
Ingredients
grape tomatoes
green olives
a small red onion cut into thin wedges
wedges of ripe plum tomatoes
fresh rosemary
olive oil
whole garlic cloves
freshly ground black pepper
a 6 to 8 ounce block of feta cheese
1 teaspoon Herbs de Provence - or Italian Seasoning but the former is better!
Instructions
Preheat the oven to 400°F.
In a 13x9-inch baking dish, stir together the tomatoes, olives, onion, rosemary, garlic and drizzle with olive oil, black pepper and herbs.
Push the tomatoes to the sides of the dish then place the block of feta cheese in the center. Drizzle an additional 1 tablespoon olive oil on top of the feta and sprinkle with the herb seasoning.
Bake until the cheese has softened and the tomatoes are roasted, about 30 minutes.
While the feta is baking, pan saute a pound of peeled and cleaned shrimp in a tablespoon of olive oil and remove to a large bowl.
Remove baking dish from oven and using a large spoon mash the feta and softened garlic and stir it together with the roasted vegetables.
Pour over the shrimp and toss.
