Chicken and vegetables bursting with flavor - everyone gets their own foil packet. You can make this for one as easily as for twelve. I use Tony Chachere's Seasoning and Paul Newmans Salad Dressing. I'm such a name dropper!
Ingredients
4 small boneless chicken breasts or a package of chicken tenders, about 1 1/4 pounds - one per packet or 2 to 3 tenders per packet
1/2 cup Newman's Own Raspberry Walnut Salad Dressing - that is 2 tablespoons per packet
4 cups fresh or frozen mixed vegetables - I love broccoli, cauliflower, red peppers and red onion - that is 1 cup per packet
2 teaspoons Tony's Original Creole Seasoning - that is 1/2 teaspoon per packet
Place 1 chicken breast on top of 1 cup of vegetables on one side of a square of heavy duty foil - place it on one half of the foil so you can later fold it over.
Pour 2 tablespoons of dressing over the chicken and vegetables and then sprinkle with the seasoning.
Fold foil over the chicken and vegetables, tightly seal and arrange on a sheet pan. I fit four on one regular baking sheet.
Bake in a 375°F preheated oven for 30 minutes or until chicken juices run clear. (cook your packets longer if your chicken breasts are more than 1 1/4 pounds total weight for four - internal meat temperature should be 150°F)
